Vegetable of the Week: Broccoli

Well, I know I’m a week late on my vegetable so I may be doing two posts in a row!

Of course, we have all eaten broccoli a million times.  Broccoli is also part of the cabbage family, like the brussel sprout. I think they must be brothers or something.  I personally love broccoli, but we all know that President Bush did not like broccoli!

Anyway, most of you probably make it smothered with cheese or boiled. So, here’s a new way to make it! Add it to your chicken caesar salad!

First, you chop your broccoli – and then you put olive oil and garlic in your pan.

Then, you add your chicken and broccoli! The broccoli needs to be stirred until it gets limp, but still remains crispy – you don’t want this broccoli to taste like it’s been boiled in your salad!

Then, you add your chicken and broccoli on top of your romaine lettuce, add your reduced fat feta cheese, add your croutons, and then pour your light caesar dressing over it and toss!

This is one of my husband’s favorite meals!  You will be surprised at how good the broccoli tastes in this salad – take my word for it!  Delicious!  Also, you don’t even have to add it to a salad, you can just make broccoli as a side dish like this- olive oil and garlic and you’re good to go! No boiling or steaming necessary!
