We had my sister, Guthrey and the girls over for supper last night to celebrate Heather's birthday....which leads me to my last "Veggie of the Week" post. I have to say- I've gotten more emails about veggies in the last month or so than ever - I love sharing ideas to make vegetables fun to eat!!

I made "Giada's Roasted Vegetables" from Giada of the Food Network. On a side note, I'd like to be Giada. I mean- she's beautiful, she cooks, she lost her baby weight in 3 hours, she guest co-hosts on the Today Show, she has spent significant time in Italy...and well, I'm not even going to mention her clevage. : ) Anywho, she's kind of my cooking idol - her AND Paula Deen. Except, I want to BE Giada, and I want Paula Deen to be my mom (don't worry, my mom won't take offense- she loves Paula, too. And, Paula, well, she just loves butter.)

Anyway, you take the following veggies: carrots, brussel sprouts, eggplant, baby red potatoes and anise (fennel bulb). I wasn't sure about putting anis in there, but what Giada says, I do so I went for it. Anyway, then you mix with dried spices (do not use fresh): oregano, thyme, rosemary and basil. Drizzle olive oil over them. Roast in a 400 degree oven for about 50 minutes. About halfway through, you'll want to stir them. It's delicious and this way, you can pick the veggies out that your kids love the most (Joey and Maddox love brussel sprouts, Maya likes potatoes, Grace likes carrots, etc). Also, I would suggest adding mushrooms, too! And, my sister really loved the eggplant so I introduced her to a new veggie!



But, I couldn't end this post, without sharing a "anise" story with you - that I KNOW you will enjoy!!

A couple months ago, I had my first experience with a fennel bulb- I had never cooked with it before. I stopped at my mother-in-law's for something and I said - "What's a fennel bulb? What does it taste like?" And, Bobbi replies, "Kind of like Anus." I about died. I said, "Anus? Like my butt?" and about fell off my chair laughing so hard. And, Bobbi goes, "Oh- I guess it's Anise- I meant Anise. I don't think butt would taste very good."

Tee hee hee. I still laugh every time I think about that conversation!!

Happy Birthday to a GREAT mom, sister, daughter, friend, aunt, wife and so much more!!! We LOVE you very much!!

I LOVE Giada, too! I DVR her 2 shows every week. I strive to chop just like her and I strive to have a warm, inviting home like Paula :) Too funny!!! Oh, and I love the countertops!!!
