This is an easy recipe! Edamame are just soybeans that are harvested before the "hardening" time. You can buy them in the frozen food section or if you live in a city with a cool little market - you can buy them on the stem! But, frozen is just as good!

You just boil water and put them in there for 3-4 minutes. They will start to slightly "open" - and that's your sign that they are ready!

Just drain them and sprinkle with sea salt!

Then, you open the pods and eat them. Note to self: DO NOT eat the whole pod - just eat the bean inside! Surprisingly, my boys LOVE edamame. They love them so much that they won't eat anything else on their plate when we have them! And, they are a great source of protein!

My friend, Greta, who knows my love for edamame sent me this recipe - that I'm going to try next time!
Preheat oven to 400 degrees.
Toss 1 pound frozen shelled edamame, thawed, with 1/2 teaspoon salt, 1/2 teaspoon ground pepper, and 1 1/2 teaspoons EVOO. Roast on a lightly sprayed baking sheet for 50-60 minutes or until golden brown.
