For the most part, I love vegetables. And, I love trying new vegetables or new way to cook the same old vegetable. So, I'm doing a "Vegetable of the Week" for the month of February in honor of my beloved veggie friends - and to promote some healthy cooking!
This week's vegetable: Brussel Sprouts.
Do not be scared. If you like broccoli, cauliflower, or cabbage...you'll love brussel sprouts.
So, when I was out dining with my husband the other night, I tasted some delicious brussel sprouts, and when the owner came by, I inquired. Yep- asked him how they made 'em! My husband was a little embarrassed as I asked, "Like normal salt or sea salt?" and "How long do you roast 'em?" Oh well- you will all thank me later!
Here's the best way to cook 'em!
Buy your brussel sprouts at the store! (sorry for the quality of this photo!)
Bring them home and love on them. Then, wash them and cut their stems off. It's okay when the outside leaves fall off - just throw 'em away.
Then, cut them up - in halves for the small ones and quarters for the big ones. Then, toss them in olive oil. Lay them flat side down on a cookie sheet. Sprinkle them with crushed pepper, sea salt (or kosher salt) and some garlic salt. Cook them at 350 for about 20-25 minutes (you have to taste test them at 20 minutes).
Then, pop them in your mouth! They should not be crunchy but should not be soggy! They are a great side dish to baked or grilled chicken! And- only 60 calories for a whole cup of them!
